βThis pale gold, clear, runny honey has a lovely floral nose. On tasting as it is much more complex and full of flavour than we expected from its texture and colour. There is loads of fragrance, some citrussy sharpness, a delicate sweetness and then a hint of salt on the finish. This is an exciting honey which we enjoyed enormously.β
βA light coloured and lightly textured honey which is absolutely packed with flavour. Herbal notes on the nose become full-on floral, exploding on the palate. When you think it might be over, you get a sublime finish of saline minerality. Wonderful.β
A new addition to our range where at the foothills of ancient and mystical Preseli Mountains the bees gather early spring nectar at isolated apiaries that include flowers such as dandelion, primroses, bluebells and of course willow trees.
This first batch of spring honey is set, gently stirred creating a marbling effect most likely due to the high glucose content from the dandelions, creating a different mouthfeel and intricate flavours including the odd crisp of natural sugar crystal that melts away in the mouth.
